Excerpt from A Practical Cook Book Compiled From the Choicest Recipes of Many Good Housewives
Take a tablespoonful of mashed potatoes, one cup of flour and a little hot water to make it thin, add a piece bf butter (size of a walnut), let it cool; then put in your yeast, and let it stand in the kitchen until bed time; then take full quart of quite hot water and stir in flour until thick as griddle-cakes; then stir in yeast mixture and beat well. Let it stand in warm room until morning; then add salt, and mix in flour slowly, and mould a long time. Do not make too stiff with flour; then let it rise. When light, make into loaves and rise again, and then bake. Do not make loaves large and there will be enough for rolls and two loaves of bread. Large loaves do not look or bake as well.
