It is thought that the rate at which these processes take place depends upon the presence of excess basic elements, a considerable amount of basic substances in excess of those tied up with inorganic acid radicles. It is generally recognized that a shifting of the PH toward the alkaline side speeds up the processes involved in curing and fermentation.
