Located on a 100-year-old family estate in the Twente region of the Netherlands, the Family Nijland estate creamery (it really is family-owned and run) makes cheese using an authentic Dutch recipe, with the milk from their own 250 cows. And these aren’t just any cows—they’re cows who enjoy soft cow mattresses (really!), massage brushes, lots of space, and a diet of fresh grass and clover. The presence of clover imparts a noticeable slightly flowery taste to the finished curds, for an incredibly unique cheese-eating experience.
