This mild Cheddar is produced for us in Leicestershire, UK, in the heart of the Vale of Belvoir, to be precise. Mini Spanish Figs are marinated in white wine, rum, and a blend of warming spices— like coriander, cinnamon, ginger, fennel, nutmeg, and cloves—then mixed right into the cheese. The result is a creamy, mild Cheddar, studded with marinated Fig pieces. It makes a wonderful addition to a cheeseboard and is superb for snacking. If you’ve ever had apple pie with a slice of Cheddar on top, consider serving with a slice of this Cheddar instead. Pro-tip: this cheese benefits tremendously from being taken out of the refrigerator 30 minutes before serving.
