This Boneless Rib Roast is a cut of 100% Angus Beef, consisting of a center loin muscle, called the “eye,” and an outer, fat-marbled muscle called the “cap.” The cattle from which it comes are pasture-raised on the idyllic plains of the Argentine Pampas. They’re fed an all-vegetarian diet, and finished on corn for at least 150 days.
