Named Hikari after the Japanese word for "illumination," this masterfully crafted, lightweight chef's knife is distinguished by its stunning birch PakkaWood handle and "hornet's nest" pattern. Extraordinarily sharp with a long-lasting edge, the blade's micro serrations reduce friction for clean, effortless slicing that enhances the flavor of the food.
- Known as a gyuto in Japan, this all-purpose knife is ideal for trimming and slicing meat and fish, and works beautifully on fresh fruits and vegetables, too.
- Dual-core stainless-steel blades are clad of 71 alternating micro layers of VG10 and VG2 high-carbon, high-chromium stainless steel Damascus to create a "hornet's nest" pattern.
