To prepare their VSOP (Very Special Old Pale) Rosé Balsamic Vinegar, chefs at Oliver Napa Valley blend new and older harvests in wooden barrels to ensure consistent quality year after year. Albana, Trebbiano and Montuni white grape must from the Emilia Romagna region of Italy and premium red wine vinegar are used to produce this perfectly balanced sweet, tangy balsamic. Use it to add zesty flavor to salads and marinades as well as seafood and carpaccio.
