Our smoldering affection for smoked salmon and smoked trout is no secret — nor is it the end of the story, as far as our love for smoked fish is concerned. You can use it as you would lox or any other smoked fish, on bagels, in quiches, or even eggs Benedict, but that’s just the beginning. Try it on top of rice bowls with a fresh, ginger-y salad, place it on pizza, or simply serve it as an appetizer with a little soy sauce for dipping.
